Plague Dinner 13
Plague dinner 13: baba ganoush, macaroni and cheese, pumpkin pie.
The important thing about Mac and Cheese is the sauce soubise. Roux, milk, some cream. Heat to thicken. Add in a caramelized onion and a lot of cheese — I used some Monterey Jack and some artisanal American Gouda-alike. Pulverise with an immersion blender, season with salt, pepper, smoked paprika, and a little hot pepper.
